Healthy Avocado Brownies

The best part about staying low carb and high fiber is how much flexibility there is to eat and enjoy most things in life. Including brownies. Yes, you read that right. Brownies. There are ways we can beat the system. This is where fiber can really shine due the fact that there is a significant amount in cocoa. Not only that, but cocoa has a great low carb to high fiber ratio. This means we can make all the desserts desired at zero guilt to us. It typically just means you have to get a little creative!

One of the biggest tips I can give to find a healthier solution for any one’s guilty pleasure is Pinterest. Pinterest is not just for pretty pictures, it’s actually a pretty search engine! So you literally can type ‘healthy brownies’ and you are guaranteed to find a healthy solution!

This is something that I used to do a lot when I was in the thick of my journey, and I still do this today from time to time. From pasta dishes to bread to desserts. There’s always a recipe that ties closely with what you want to achieve, the key is to take it to the finish line by adding in holistic, fiber-filled ingredients because most recipes you find will not incorporate that.

Here are some keywords that I use on Pinterest to search for healthy recipes:

  • ‘keto’
  • ‘low carb’
  • ‘healthy’
  • ‘high-fiber’
  • ‘healthy meal prep’
  • ‘healthy dinner’

Not only have I been able to find a great baseline for a healthy recipe, but I’ve also been able to discover a lot of products that I didn’t know existed! Avocado brownies were definitely on the list. I made these and I think I ate the whole batch in about 3 days, and I’m being generous. These are deadly, extremely delicious, I’m not overselling – I’m warning you! If you or someone you know is a brownie lover is in need of having these recipes!

So the reason why I can even say these brownies are low carb/high fiber is a very special product that doesn’t sacrifice taste and has a great low carb, high fiber ratio. That is Choc Zero’s Maple Syrup. Maple syrup shows up in a lot of dessert recipes, which is fine, but the typical syrup which has roughly 15g net carbs per serving. But if you pick up something like Choc Zero’s product, you can then create amazing baked goods like these, chocolate-y avocado brownies.

Ingredients like this combined with cocoa powder, avocados, and lily’s chocolate chips make it a recipe for success. You can indulge, without the guilt. Plus, the avocado makes these brownies light and airy allowing you to again, enjoy more without the sugar rush or crash that comes with eating a lot of sweets. And of course, these bites are filled with fiber, meaning they’ll leave you satisfied in the moment and for hours after.

Here’s what you need to get started in the kitchen and change the way you see brownies. Make sure you have a deep baking dish and a food processor to make this successful.

Ingredients list

• 2 avocados, medium
• 2 eggs, large
• 1/2 cup Choc Zero Maple Syrup
• 1/2 tsp baking soda
• 1/2 cup Lily’s chocolate chips, semi sweet
• 1/2 cup cocoa powder
• 1/4 cup Truvia
• 1/2 tsp salt or a pinch of sea salt
• 1 tsp vanilla extract, pure
• 2/3 cup almond flour

Instructions

  1. Preheat oven to 350 degrees F.
  2. Set aside a lightly greased baking sheet.
  3. In a food processor, add avocado, maple syrup, and sugar.
  4. Add the eggs and vanilla extract.
  5. Blend well.
  6. Gently add in the flour, baking soda, salt, and cocoa and mix well.
  7. Turn off the processor and remove the blade.
  8. Stir in the chocolate chips using a spoon or spatula
  9. Spread the batter into the pan evenly. Bake for 25-30 minutes or until done.
  10. Test the middle of the batter with a knife or toothpick to make sure nothing sticks.
  11. Remove from heat and let cool before cutting into squares.
