Fair warning: you’ll never be able to have a salad the same way after making this dressing. This post clearly isn’t meant to highlight the salad toppings, although super fibrous, but it’s here to highlight the simple yet tasteful dressing that accompanies it.
I’m not sure if this is a family recipe.. but this is a staple dressing that we make almost exclusively for every salad we eat. This dressing is light, fresh, and flavorful. It’s something that you can make for lunch or dinner AND when you’re trying to impress some house guests. Potluck? Go for the salad with this killer dressing!
So I can’t take the credit for this dressing, it goes to my step mom. Unfortunately, she eyeballs the proportions, so I did my best to attempt to give the closest proportions for how it’s supposed to taste!
While most dressings are low in carbs they can be high in fat. This is one of those dressings- but it’s good fat! It only has four simple ingredients that probably already most likely in your kitchen already so you can make it tonight!
In a bowl mix:
- 1/2 lemon juice
- 1 tbsp of dijon mustard *pro tip use: Maille Dijon
- 4 tbsp of olive oil
- pince of salt
The dressing is supposed to be not too thin, it should coat the salad without caking it OR slipping off too easily. You can take a leaf from the salad and test it out!
- chick peas
- sunflower seeds
Just like any smoothie, you want a good combo of healthy fats, protein, fiber, and greens.
The chickpeas act as your healthy protein, the sunflower seeds are your healthy fat, the cucumbers are your fiber and salad is obviously your greens!
